Recipes From a Parisian Cafe

These recipes were found in a book I recently purchased entitled, Paris Cafes - The Select Crowd, by Fitch and Tulka. Rick Tulka has a fascinating flickr site where he posts the drawings he does at the cafe, Le Select, in Paris, France. He has been going there everyday for 5 or 6 years now. His drawings are worth checking out.

We put the Welsh rarebit together for lunch today, and while we are trying to watch our fat intake, this dish was superb! Pour yourself a riesling, or chardonnay, slip a taste of the rarebit in your mouth, close your eyes and you are in Paris...for the first time, or once again.

  1. You made some nice pages. Sometimes the rarebit has been changed due to dialect or accents, I don't know which, to Welsh Rabbit. I would never have thought the french would serve such a peasant meal!
